359. Steamed Salted Fish

Have you ever eaten 'Steamed Salted Fish'?

My SIL (son in law) catches fish whenever he is offshore on the rig, then make the fishes into salted fishes, sell them onshore or bring some back home when he comes offshore. So, each time he comes back we have a lot of fresh fish or salted fish in the house.

Below is one type of 'ikan masin' (salted fish) which he made himself which I steamed it today.

Steamed Salted Fish



To steam -

1. Cut the fish, place 2 pieces in a plate

2. Sliced 3 small shallots, 3 garlic, 1 red chilli and 1 inch ginger

3. Place the sliced ingredients over the fish

4. Steam for 15 minutes

5. Serve with hot rice and other dishes.

358. Tis' & Tat' and Kurma Ayam

Okayyy...so I've again changed my template and I just love this one I am using! Food & stuff ha ha...
BTW, so sorry I've been away from blogging this couple of days. Life been quite hectic for the last few days with NOT MYSelf but with my family members. Hmmm.... just this morning when fetching Noormy from Marriot & Spa resort, I told her maybe I now badly need a day off from the house ! Immediately she asked,' when ma? just let me know and I will book you a night there.'

Have you EVER feel like I do SOMETIMES? Just a day or even a couple of hours away from the HOUSE? Lol... I bet you don't.

Enough of that, I've just received an email from SARAWAK BLOGGERS core team to change my 'blogger of the month' badge. They want to make it into one logo now. The latest, that's the one I just put up ( the blue one).

It looks nice :)

So, change my logo might as well I also changed my template. I likeeee....


Today I cooked ' Kurma Ayam' for lunch. Something the girls not really in favor of except Noormy but hubby loves this dish.

Kurma Ayam



I used 2 pieces of 'Paha Ayam' (2 large thigh of a chicken, cut and cleaned).

RM1 Kari Kurma Hidup ( you can buy this from the Indian Stall ) e.g. in Miri it is at the old 'Tamu Muhibbah'.

1 packet of Kerisik Kelapa ( coconut paste) . You can either use 1 whole packet 100gm or half of it.

To cook -

1. Saute grounded 2 garlic, 2 small shallots, 2 cm ginger in a pot

2. Add in the Kurma paste, then the Kerisik Kelapa

3. Add a bit of water, leave to boil over moderate fire for 3 minutes

4. Add in the cut chicken thighs

5. Add in 1 cup of Evaporated Ideal Milk

6. Add in 1 cup of water

7. Let boiled until chicken parts is tender, once in a while stirring with a ladle and adding a little more water

8. When cooked add in 2 - 3 spoons of sugar, add salt and ajinomoto to taste

9. Taste should be a bit sweetish and not too salty.

I served this dish with hot rice and some of my homemade Sayur Masin with hubby enjoying it more than anyone else LOL...

357. Steamboat

Zu and I prepared 'Steamboat' for dinner last night. I'd preferred we have it for lunch instead but aya was on morning duty and came back in the evening so I said okay.

We don't usually have 'Steamboat' for a meal but when we do you can see there will be plenty of food on the table. This time it was Zu's idea to have it. So once again I took out my 'Steamboat' equipment from my cupboard and lay it out on the dinner table he he...

I know Zu likes the grilling part rather than the boiling soup as you can see here...

I prepared lots of cut 'cili padi' dipped in dark soy sauce with some lime juice (limau kasturi) squeezed in a bowl. That's to eat the cooked ingredients with.

As for the soup, I added some MAGGI chicken cubes in and add salt and ajinomoto to taste.

Everyone sat together at table when the soup started boiling. It was fun really as everybody (hubby, myself, Zu, Aya, Alif & Noormy except Farouk who was living out) were eating and chatting at the same time.

356. Asam Pedas with Fresh Turmeric

I didn't want to waste these.

They are turmerics, which hubby brought back home after his drive up to work outstation in Kpg Iran, Subis and Niah last Monday. Usually I use turmeric powder to cook anything with. So today I decided to cook my 'Asam Pedas Ikan Bawal Hitam' with this, instead of it's powdered form.

I didn't have any pineapple in my fridge so I decided to use my stock of dried 'Asam Gelugor' (dried tamarind) for the sour taste.

Okay, the preparation is the same as my usual 'Asam Pedas' except this time it was fresh turmeric instead of powdered form and dried 'Asam Gelugor' instead of pineapple. And I used soaked dried chillies instead of fresh red chillies.



Preparation

1. Ground 5 - 8 soaked dried chillies, 1 tablespoon belacan (shrimp paste), 6 red shallots, 4 garlic, 2" ginger.

2. Ground 2 1/2" turmeric.

3. Crush 2 stalks of lemon grass.

4. Saute all the above ingredients 1, 2, 3 in a pot.

5. Add some water (Let it boil under moderate fire like above to let all the saute ingredients to well cooked).

6. When boiled, I add in 4 moderate sized dried 'Asam gelugor' (Let it boil again to let the sourish taste to come out).

7. Add in salt and ajinomoto to taste.

8. Add in some cut 'Ikan Bawal Hitam'.

9. Add more water (according to how much soup you want). Bring to the boil.

10. Taste again for salt.


My share of 'Asam Pedas Ikan Bawal Hitam' using fresh turmeric. I like to eat the head part :p



Almost nil I used fresh turmeric. Today I found out fresh turmeric gives the fish soup a more aromatic smell :)

But Noormy still favor my 'Asam Pedas' cooked with pineapple.

After lunch hubby came home bringing not two but three plastic packets of these fresh young corns.

Let me think what to cook them into tomorrow :) any ideas?
